An unusually processed High Mountain Oolong from Shan Lin Xi in Zhushan Township. Silky profile with an incredibly soft, pillowy texture and very complex, fruity-floral flavors. This lot is grown all-naturally.
Excellent for fans of complex, layered profiles. A great compromise between the fragrant, creamy green oolongs and the bolder, more flavorful darker styles.
Taiwan is famous for its oolong, and those grown at 1000m+ are called gaoshan, or high mountain. Because they are grown at such high altitudes, the teas release compounds to protect them from the harsh climate, making them much more fragrant, flavorful, and creamy. Taiwan's high mountain teas come from various famous mountains, and each mountain has a particular flavor profile. Shan Lin Xi oolongs tend to have a fresh slightly fruity flavor, with woody notes and a very soft, pleasant texture.

Recommended Brewing Instructions:
Use 2tsp (~4g) per 250ml cup. Brew for 1 minute.
- 185F for a lighter, more floral profile with soft, silky mouthfeel.
- 205F for a fuller, more buttery flavor with a silky mouthfeel.
This tea can be rebrewed up to 4 times, with hotter water and longer infusions.
