White Peony, also known as Bai Mu Dan, is a fruity, lush tea with hints of spice and fresh hay. The texture is full, soft, and lends well to the delicate flavors in the tea. It is made by plucking buds and young in the early spring, and sun-drying them in traditional bamboo trays.

Of all the types of tea, white teas are the most simple to process, but also require very high quality leaf. They also have the most pure, delicate flavor profiles.

Recommended Brewing Instructions: Use 3tsp (~3g) per 250ml cup.
Brew for 3 minutes.

- 180F for a smoother, sweeter profile.

- 190F for a stronger, more complex profile.

This tea can be rebrewed up to 4 times, with hotter water and longer infusions.
