Black Pearl is a semi-ball rolled black tea, harvested in July 2014, from the island of Sumatra, Indonesia. It is grown in the mineral-rich, volcanic soils of the island. Indonesian black teas are an interesting compromise between the sweet, smooth Chinese black teas, and the bright, bold Indian black teas.

This tea is strong and bright, but also sweet and crisp. The fruity notes resemble the flavor of Washington Red apples. The texture is brisk, but very smooth. It has an incredibly balanced profile that is universally appealing.

Recommended as a daily drinker. It can be adapted to suit the seasons; it makes a smooth and mild brew in the winter, and a completely refreshing iced tea for the summer.

Recommended Brewing Instructions: Use 1tsp (~3g) per 250ml cup.
Brew for 2 minutes.

- 185F for a lighter, fruity profile with honey barley and apple notes.

- 200F for a fuller profile with apple and malt flavors and undertones of fresh hay.

This tea can be rebrewed up to 3 times, with hotter water and longer infusions.

Iced Tea Instructions: Use 4tsp (~10g) per 500ml of water. Brew for 3 minutes, 4 minutes, then 6 minutes, combining the infusions in a larger container. Chill in refrigerator, or with ice packs.
