Sencha of the Wind

Description

Sencha of the Wind is a green tea, harvested in May 2013, from Kyoto, Japan. It is grown at an altitude of 500m (1600ft), on rolling hills that face southeast. Sencha is the most common type of Japanese green tea, usually made with the Yabukita varietal. This sencha is made from a varietal with a reduced amino acid content, resulting in very low bitterness.

True to its name, this tea is reminiscent of fresh winds in spring. The dewy, grassy flavors are sweet and delicately layered, with a soft, well-rounded texture. There are hints of fresh florals, and a subtle undertone of umami - the full, savory essence that is unique to Japanese tea.

This tea is best suited for tea drinkers with lighter, more delicate taste preferences. It can also serve as an example of the softer, sweeter end of the Japanese sencha family.
